Class 2 advanced prep


We are so excited to cook with you next week and to talk about the impact of food on health and menopause! Our class will focus on intuitive eating. We’ll be cooking Shrimp and Artichoke Lavash Flatbread and Skillet Broccolini.  

To make the most of our time together, there are a few things you will need to do in advance of the class, so please read closely:

Preheat the oven to 425.

Ensure that you have all of the ingredients listed for the recipe

Ensure that you have all the equipment needed on the equipment list

  • Measure and prepare your ingredients in advance 

Equipment - List

Chef’s knife
Cutting board
Measuring spoons
Liquid measuring cup
Dry measuring cups
1 rimmed baking sheet
2 medium bowls
Pastry brush
12-inch non-stick skillet
Tongs
Box grater
Microplane

Ingredients - List

Produce:

  • 8 ounces frozen artichoke hearts

  • 7 garlic cloves

  • 2 lemons

  • Small bunch parsley

  • 2 cups baby arugula 

  • 1 pound broccolini

Pantry: 

  • Extra-virgin olive oil 

  • Kosher salt (alternative - sea salt or iodized salt) and cracked black pepper

  • 2 anchovies (optional)

  • Red pepper flakes

  • ¼ cup golden raisins

  • Lavash bread (look for Joseph's brand of lavash, preferably the smaller, 9 x 8 inch, but if you can only find the larger 11 x 8 you can cut them down to size to fit in the sheet pan). 

Other:

  • 1.5 cups or 5 oz part-skim mozzarella cheese

  • ½ cup nonfat Greek yogurt

  • ½  cup shredded parmesan cheese (or Romano cheese)

To do ahead:

For the Flatbread - have all the ingredients measured and prepped, we will prep the shrimp and cheese together.

For the Broccolini -  have all the ingredients measured and prepped, we will prep the broccolini and cheese together.
