Class 1 Advanced Prep

 We are so excited to cook with you and introduce you to these healthy holiday appetizers. We’ll be making Endive Cups with Blue Cheese, Walnuts and Pomegranate Seeds, Moroccan Carrot Dip and a Pomegranate Mojito Mocktail.  We have provided several options for endive cups, feel free to make whichever appeals to you.  I also be demonstrating the beet and smoked salmon version, if you want to make that as well, add those ingredients to your shopping list. We have also provided a recipe for Dukkah, which is an Egyptian spice mixture, it makes a great topping for the Carrot Dip and a great holiday gift.  Take a look at the recipe if you want to get the ingredients.


To make the most of our time together, there are a few things you will need to do in advance of the class, so please read closely:

  • Preheat the oven to 350

  • Ensure that you have all of the ingredients listed for the recipe

  • Ensure that you have all the equipment needed on the equipment list

  • Measure and prepare your ingredients in advance

2 large tall cocktail glasses

Ingredients - List

Produce:

  • 1.5 lbs carrots 

  • 1 clove garlic

  • 1 lemon

  • 1 lime

  • Small bunch mint leaves

  • 1 pomegranate

  • 1 small shallot

  • 3 large endives

Pantry: 

  • Extra-virgin olive oil 

  • Olive oil spray - optiona

  • Kosher salt (alternative - sea salt or iodized salt) and cracked black pepper

  • Ground coriander 

  • Ground ginger

  • Cayenne

  • Cinnamon

  • Pomegranate juice 

  • Pomegranate molasses or honey

  • Seltzer or sparkling water

  • 4 (8-inch) whole wheat breads

Other:

  • ¾ cup crumbled blue cheese (preferably Stilton or Gorgonzola)

To do ahead:

For the Endive cups - have all the ingredients measured and prepped, we will prep the endive and the pomegranate together.  

 For the Carrot dip -have all the ingredients measured and prepped, we’ll do the pita chips together.

For Mojito -  have all the ingredients measured and prepped.
