“Healthy Holidays”
Class 3 Advanced Prep

 We are so excited to cook with you and talk about healthy holiday treats. We’ll be making Sesame Tahini Caramel Corn, Chocolate Bark with Pistachios & Dried Cherries and Pear and Raspberry Bars.

To make the most of our time together, there are a few things you will need to do in advance of the class, so please read closely:

  • Preheat the oven to 350 

  • Ensure that you have all of the ingredients listed for the recipe

  • Ensure that you have all the equipment needed on the equipment list

  • Measure and prepare your ingredients in advance

Ingredients - List

Produce:

  • 4 ripe but firm pears (Bosc or Bartlett)

  • Fresh ginger

  • 1 orange

Pantry: 

  • Extra-virgin olive oil 

  • Kosher salt (alternative - sea salt or iodized salt) and cracked black pepper

  • Maple syrup

  • Tahini

  • Vanilla extract

  • Cinnamon

  • 6 cups popped popcorn (buy precooked or microwave, make sure nothing added)

  • White sesame seeds

  • 1 cup roasted shelled pistachios

  • 1 cup dried cherries or cranberries

  • 24 oz bittersweet chocolate 

  • Neutral vegetable oil

  • Vanilla extract

  • Almond extract (optional)

  • ¾ cup sliced almonds

  • 1 cup oat flour

  • 1 cup all purpose flour

  • ½ cup light brown sugar

  • ¼ cup old fashioned oats

  • ¾ cup sugar free raspberry jam

  • ½ cup sugar

Other:

  • 1 large egg

  • 6 tablespoons unsalted butter

  • ¼ cup apple cider, orange juice or water

To do ahead:


For the Popcorn - have all the ingredients measured and prepped and popcorn made.

For the Bark -  have all the ingredients measured and prepped.
