“FALL” into Healthy Habits
Class 1 Advanced Prep

We are so excited to cook with you next week and to talk about the impact of food on health and menopause! Our class will focus on mindful eating.  We’ll be cooking Sheet Pan Fajitas and Tahini Chocolate Chip Cookies.

To make the most of our time together, there are a few things you will need to do in advance of the class, so please read closely:

  • Preheat the oven to 450 

  • Ensure that you have all of the ingredients listed for the recipe

  • Ensure that you have all the equipment needed on the equipment list

  • Measure and prepare your ingredients in advance

Cutting board
Measuring spoons
Liquid measuring cup
Dry measuring cups
3 rimmed baking sheets
Parchment (optional)
Small bowl
Spatula
Medium bowl
Large bowl
Wooden spoon
Tongs

Ingredients - List

Produce:

  • 3 bell peppers (any colors you want)

  • 1 large white or red onion

  • 1 mango

  • 1 avocado

  • 1 small jalapeno or fresno

  • 1 lime

  • ½ bunch of cilantro

Pantry: 

  • Extra-virgin olive oil 

  • Kosher salt (alternative - sea salt or iodized salt) and cracked black pepper

  • Chili powder

  • Smoked paprika

  • Cumin

  • 8 corn tortillas or 8-6 inch flour tortillas

  • 1 cup tahini

  • ½ cup oat flour (or grind your own with old fashioned oats in food processor)

  • ½ cup almond flour

  • ½ cup maple syrup or honey

  • Vanilla

  • Baking Soda 

  • 1 cup bittersweet chocolate chips (60 or 70%)

  • Sea salt 

Other:

  • 1 large egg

  • 4 (4-6 oz) salmon fillets

 

To do ahead:

For the Fajitas - have all the ingredients measured and prepped, we will prep all the veggies together. 

For the Cookies -  have all the ingredients measured and prepped.
