Creamy Raspberry-Chocolate Parfait

2 tablespoon water
2 teaspoons cornstarch
5 tablespoons sugar, divided
8 ounces frozen or fresh raspberries
2 teaspoon orange liqueur, optional
1 pound low fat cottage cheese
¼ cup nonfat greek yogurt
1 teaspoon vanilla extract
1½ ounce bittersweet chocolate, finely chopped
In a small saucepan stir water, cornstarch, and 2 tablespoons of sugar together to combine. Add the raspberries and bring to a simmer on medium heat until the liquid is just bubbling around the edges, about 5 minutes. Add orange liqueur if using and transfer raspberry mixture to a bowl to cool.
Process the cottage cheese, yogurt, remaining sugar, and vanilla in a food processor until smooth, about 30 seconds.
Once the raspberries are cool to room temperature, spoon about 3 tablespoons of the raspberry compote on the bottom of a dessert cup or wine glass. Divide the cheese mixture on top of the raspberries and finish by spooning) the remaining compote over the cheese mixture. Sprinkle the chocolate on top.
