Korean Inspired Slaw with Chicken and Gochujang Dressing

Serves 4

  • 1 tablespoon Gochujang 

  • 1 tablespoon rice vinegar 

  • 1 tablespoon sesame oil 

  • 1 tablespoon vegetable or peanut oil 

  • 1  tablespoon soy sauce 

  • 1 tablespoon honey 

  • 1 clove garlic, minced 

  • 1½ tablespoons toasted sesame seeds 

  • Kosher salt and freshly ground black pepper 

  • ½ large red cabbage, thinly sliced or 1 package (14-ounces) coleslaw mix 

  • 1 yellow pepper, thinly sliced 

  • 1½ cups shredded Rotisserie chicken (6 ounces) 

  • 4 scallions, thinly sliced 

  • ½ cup chopped fresh cilantro 

Whisk Gochujung, vinegar, oils, soy sauce, honey, garlic and sesame seeds together in a large bowl. Season to taste with salt and pepper. 

Toss in the cabbage (or slaw mix), peppers, rotisserie chicken, scallions and cilantro in a bowl with the dressing. Toss well to combine. Cover and set aside for 30 minutes for the flavors to meld.
