Moroccan Carrot Salad

  • 2 tablespoons extra-virgin olive oil 

  • Zest from 1 lemon, plus 2 tablespoons lemon juice 

  • 1 teaspoon honey 

  • Kosher Salt and freshly ground black pepper 

  • ¼  teaspoon ground cumin 

  • ¼ teaspoon sweet paprika 

  • ¼ teaspoon ground cinnamon 

  • Pinch of cayenne pepper 

  • 1 pound carrots, trimmed, peeled and grated 

  • ¼ cup golden raisins

  • ¼ cup chopped fresh mint or cilantro leaves 


Whisk oil, lemon juice, honey, ½ teaspoon salt, ¼  teaspoon black pepper, cumin, paprika, cinnamon, and cayenne in a medium bowl until combined. Add carrots, raisins, and mint (or cilantro). Toss to combine. Season to taste with salt and pepper.
