To prepare the following, whisk all ingredients in a small bowl or shake in a jar until well combined. Season with salt and pepper.
Balsamic Vinaigrette
Calories per tablespoon: 70
½ cup extra-virgin olive oil
¼ cup water
3 tablespoons balsamic vinegar
2 teaspoons Dijon mustard
2 teaspoons minced shallot or red onion
1 garlic clove, minced
1 teaspoon honey
½ teaspoon dried oregano
Salt and pepper
Lemon Herb Vinaigrette
Calories per tablespoon: 62
½ cup extra-virgin olive oil
¼ cup water
3 tablespoons lemon juice
2 teaspoons Dijon mustard
1 garlic clove, minced
1 teaspoon honey
1 tablespoons minced fresh parsley, basil

Honey Dijon Vinaigrette
Calories per tablespoon: 51
1/3 cup safflower oil
¼ cup water
3 tablespoons cider vinegar
¼ cup Dijon mustard
2 tablespoons honey
Salt and pepper
Ranch Dressing
Calories per tablespoon: 76
¼ cup buttermilk
¼ cup light mayonnaise
¼ cup lowfat sour cream
2 tablespoon water
1 tablespoon lemon juice
1 tablespoon dried dill
½ teaspoon garlic powder
Salt and pepper
Sesame Dressing
Calories per tablespoon: 83
2 tablespoon rice vinegar
2 tablespoons water
1 teaspoon minced shallot or scallions
½ teaspoon grated fresh ginger
½ teaspoon Asian chile-garlic sauce
1 teaspoon honey
2 tablespoons olive oil
1 tablespoon sesame oil
Salt and pepper
Mash avocado in jar until smooth. Add remaining ingredients and shake until well combined. Season with salt and pepper.
Avocado-Citrus Dressing
Calories per tablespoon: 51
½ avocado
2 teaspoons chopped shallots or red onion (optional)
1 tablespoon lime or lemon juice
1 tablespoon chopped cilantro
3 tablespoons water
1 tablespoon extra-virgin olive oil
Pinch of chile powder
Salt and pepper to taste
