Tomato Bruschetta

Makes 12 toasts

If you can’t find whole wheat baguette, you can substitute sour dough bread. The slices will most likely be bigger, so use 6 ¾ inch slices and cut each slice in half on the bias to create 12 smaller pieces. 

  • ½ pound ripe tomatoes, cored and cut into ¼ inch dice

  • 4-5 cloves garlic, minced (you will need about 1½ tablespoons of minced garlic) 

  • 2 tablespoons extra-virgin olive oil 

  • 12 medium basil leaves, cut into thin slivers

  • 12, ¾ inch slices whole wheat baguette 

  • Kosher Salt

FOR A GAS GRILL:  Turn all the burners on to high, cover and heat for 15 minutes. Leave all burners on high. 

FOR A BROILER: Arrange bread slices on a baking sheet. Broil until bread is deep golden, 1 to 2 minutes. Flip and repeat on the second side.  

Brush one side of each toasts evenly with the olive oil. Using a small knife, smear a bit of the garlic (about ¼ teaspoon) onto each toast. Season tomatoes with salt and top each toast with a scant ¼ cup of tomatoes. Season again with a bit more salt and then top with basil strips. Serve.
