 NuCook Live Remote Cooking Class - Menopause 6 - class 4

We are so excited to cook with you next week and to talk about the impact of food on health and menopause! Our class will focus on healthy eating around the world. We’ll be cooking Chermoula Fish and Crispy Sweet Potato Fries with Chermoula Yogurt.

To make the most of our time together, there are a few things you will need to do in advance of the class, so please read closely:


Preheat the oven to 425

Ensure that you have all of the ingredients listed for the recipe

Ensure that you have all the equipment needed on the equipment list

  • Measure and prepare your ingredients in advance

Cutting board
Measuring spoons
Liquid measuring cup
Dry measuring cups
Food processor
Large skillet with lid
Wooden spoon
Rimmed baking sheet
Whisk
Parchment paper

Ingredients - List

Produce:

  • 7 cloves garlic

  • 1 small onion

  • 1 small fennel bulb

  • 8 oz cherry tomatoes (or grape tomatoes, any color)

  • 2 lemons

  • Cilantro

  • Flat Leaf parsley

  • 1 pound sweet potatoes (any color)

Pantry: 

  • Extra-virgin olive oil 

  • Kosher salt (alternative - sea salt or iodized salt) and cracked black pepper

  • Red pepper flakes

  • ½ cup dry white wine

  • Saffron (optional)

  • Sweet paprika

  • Cumin

  • Cinnamon

  • 2 tablespoons cornmeal

  • Smoked paprika

  • Cayenne

Other:

  • 4 4-6 oz filets (cod, haddock or any other thick white fish) 1.5 lbs total

  • ¾ cup nonfat greek yogurt

To do ahead:

For the Fish - have all the ingredients measured and prepped, we will prep fennel together.

For the Potatoes -  have all the ingredients measured and prepped, we will prep potatoes together.
