Basic Cauliflower Rice

Serves 4 (as a side dish)

You can also use fresh cauliflower. Grate cauliflower on the largest holes of a box grater or process in a food processor (you need to do this in batches) 

  • 1 (12-ounce) packaged frozen cauliflower rice (no need to thaw) 

  • 2 teaspoon extra-virgin olive oil or vegetable oil

  • ½ teaspoon kosher salt 

If the bag has frozen clumps of cauliflower rice, break it up first for even cooking. I usually slam the bag on the counter. 

Heat oil in a large skillet over medium heat. Stir in the cauliflower rice and salt. Stir occasionally for 5-7 minutes, until the cauliflower rice is getting brown spots. Serve warm.
