Cucumber-Tomato Salad with Peanuts

1 pound tomatoes (Kumato tomatoes are a good choice when summer tomatoes are not available)
1 English cucumber, cut in half lengthwise and each half sliced thinly diced
1 small onion, finely diced (red or white)
½ cup mint or cilantro leaves, roughly chopped
1 Fresno chili, seeded and finely chopped
1 tablespoon lemon or lime juice
½ teaspoon ground cumin
Kosher or sea salt
3 tablespoons chopped roasted peanuts
Combine, tomatoes, cucumbers, onions, mint, chilies, lime juice, and cumin together in a medium bowl. Season to taste with salt and pepper. Transfer to a serving bowl and top with peanuts. Serve.
