Cucumber-Tomato Salad with Peanuts

  • 1 pound tomatoes (Kumato tomatoes are a good choice when summer tomatoes are not available) 

  • 1 English cucumber, cut in half lengthwise and each half sliced thinly diced 

  • 1 small onion, finely diced (red or white) 

  • ½ cup mint or cilantro leaves, roughly chopped 

  • 1 Fresno chili, seeded and  finely chopped 

  • 1 tablespoon lemon or lime juice 

  • ½ teaspoon ground cumin 

  • Kosher or sea salt 

  • 3 tablespoons chopped roasted peanuts 

Combine, tomatoes, cucumbers, onions, mint, chilies, lime juice, and cumin together in a medium bowl. Season to taste with salt and pepper. Transfer to a serving bowl and top with peanuts. Serve.
