Italian Antipasti Chopped Salad

This makes a great side salad for any Italian meal. For something a little heartier -add canned white beans and/or canned tuna to make it a great main-course meal.
Ingredients
2 tablespoons red wine vinegar
1 garlic clove, minced
1 teaspoon Dijon mustard
1 teaspoon honey
½ teaspoon dried oregano
1 shallot or half small red onion, thinly sliced
2 tablespoons extra-virgin olive oil
Salt and freshly ground pepper
1-2 romaine hearts, chopped (6 cups)
1 small head radicchio, thinly sliced (2 cups)
½ head fennel bulb, thinly sliced
1 (14-ounce) can artichoke hearts, drained and cut roughly chopped
½ cup pitted black olives cut in half
1 pint cherry tomatoes, cut in half
1/2 cup (1 ounce) shaved parmesan cheese
Directions
Whisk vinegar, honey, mustard, garlic, and oregano in a large bowl. Add sliced shallots or onions and let sit for 5 minutes. Whisk in olive oil and season to taste with salt and pepper.
Add remaining salad ingredients, except the parmesan cheese. Adjust seasoning.
Transfer to a serving platter and top with shaved parmesan cheese.
