Italian Antipasti Chopped Salad

Serves 4. Calories: 236, fat: 15 g (saturated: 2g, unsaturated: 12g), sodium: 789 mg, carbohydrates: 23 g, protein: 6 g, fiber: 5 g, sugar: 6 g

 

This makes a great side salad for any Italian meal.  For something a little heartier -add canned white beans and/or canned tuna to make it a great main-course meal.

 Ingredients

  • 2 tablespoons red wine vinegar

  • 1 garlic clove, minced

  • 1 teaspoon Dijon mustard

  • 1 teaspoon honey

  • ½  teaspoon dried oregano

  • 1 shallot or half small red onion, thinly sliced

  • 2 tablespoons extra-virgin olive oil

  • Salt and freshly ground pepper

  • 1-2 romaine hearts, chopped (6 cups)

  • 1 small head radicchio, thinly sliced  (2 cups)

  • ½  head fennel bulb, thinly sliced

  • 1 (14-ounce) can artichoke hearts, drained and cut roughly chopped 

  • ½ cup pitted black olives cut in half

  • 1 pint cherry tomatoes, cut in half

  • 1/2 cup  (1 ounce)  shaved parmesan cheese

 Directions

Whisk vinegar, honey, mustard, garlic, and oregano in a large bowl. Add sliced shallots or onions and let sit for 5 minutes. Whisk in olive oil and season to taste with salt and pepper.

Add remaining salad ingredients, except the parmesan cheese. Adjust seasoning.

Transfer to a serving platter and top with shaved parmesan cheese.
