Pomegranate Mojito Cocktail

Yield: 2 mocktails

A traditional mojito  is made with mint, fresh lime juice, sugar and soda water. The alcoholic version contains white rum. It’s served in a highball glass with lots of ice cubes and is usually garnished generously with extra mint and lime. This non alcoholic version omits the rum and includes pomegranate juice. Pomegranate juice is naturally sweet, so I don’t use any additional sweetener. If you like yours a little sweeter, feel free to add some. To make this into a pitcher, multiply the ingredients by the number of servings, muddling in the pitcher, mix up everything but the ice and sparkling water.

  • 1 lime, cut in 6 wedges, divided  

  • Honey or sweetener to taste, if desired (optional)

  • 10 fresh mint leaves, plus extra for garnish

  • ½ cup (4 ounces), pomegranate juice 

  • Ice

  • Sparkling water to top off 

  • Fresh pomegranate seeds for garnish

Place 2 lime wedges and 2 tablespoons pomegranate juice to two tall glasses. Add sweetener (if using). Use a wooden spoon to crush/muddle gently limes until all the juice has been pressed out of the lime.  

Crush the mint leaves together in your hands to release the essential oils, divide leaves into each glass. Give the mint a gentle press a couple of times with the wooden spoon.

Add plenty of ice to the glass and top with sparkling water and stir well. Garnish with pomegranate seeds, mint and lime.
