Shiitake “Bacon”

  • 8 ounce shiitake mushrooms, stems removed and sliced in ¼” inch strips

  • 1 tablespoon olive oil 

  • 1 tsp smoked paprika

  • ½ tsp kosher salt

  • ¼ tsp black pepper

Preheat oven to 300, line a baking sheet with parchment paper.

Toss mushrooms with olive oil, paprika, salt and pepper on baking sheet.  Arrange the mushrooms so they are not touching each other.  Bake for about 60 mins, until mushrooms are browned and look crisp on the edges (cooking time will vary depending on the size of your mushrooms).

Remove from oven and allow to cool before serving.  They will get crispier as they cool.  Store in airtight container for up to 5 days.
