Skillet Broccolini with Cheese

You can make the Broccoli as a side dish or use it as the topping for this delicious flatbread. Use the large holes of a box grater to shred the Parmesan.
2 tablespoons extra-virgin olive oil
2 tablespoons water
2 anchovies, minced, optional
3 garlic cloves, minced
½ teaspoon table salt
⅛ teaspoon red pepper flakes
1 pound broccolini, trimmed and cut into 1½ inch pieces
¼ cup golden raisins
¼ cup shredded Parmesan cheese
Lemon wedges for serving
Stir oil, water, anchovies (if using), garlic, salt, and pepper flakes together in 12-inch nonstick skillet. Add broccolini, toss to coat, and cover. Cook over medium-high heat until a paring knife inserted in thickest stalks of broccolini meets little resistance, about 5 minutes, shaking skillet occasionally to redistribute broccolini.
Uncover, and continue to cook until water has evaporated and broccolini is browned, 5 to 7 minutes, stirring rarely. Off heat, stir in raisins. Season with salt to taste.
If serving this as a side dish, transfer to a serving platter, sprinkle with Parmesan and serve with lemon wedges
